Savoury mushroom and zucchini beef kebabs
Sizzling savoury kebabs or kabobs are one of the best loved summer meals because it’s such a simple meal that can be put on the barbeque. However, I have discovered that the air fryer has made this dish our favourite in the cooler weathers too!
Unlike the barbeque, the air fryer is on the kitchen countertop which means I can simply pop my kebabs in and have them ready in 10 minutes. I don’t have to watch them being grilled and the clean-up is a breeze. Best of all, the meat and vegetables are juicy and tender on the inside bursting with garlic and basil flavours.
Things to note:
Air Fryer capacity and accessories: Air fryers basically comes in two shapes, an egg like shape with a round basket and a square shape with a square basket. If you have a round basket, you may consider cutting the wooden skewers shorter (maybe in half) so that the kebabs can fit in a single layer. For square baskets, depending on the size of the basket you may need to cut the wooden skewers shorter to fit in the basket. The other thing to check is whether your air fryer comes with skewers as part of the accessories (especially for the multifunctional air fryers).
Skewers: Wooden skewers would need to be soaked in water for 10 minutes or more to prevent burning. In addition, if you are not shortening the skewers then you may want to use two skewers in one kebab to make it easier to turn over.
Type of meat: I usually use beef sirloin because I find them quite tender and does not need to be marinated for a long time to help with making the meat tender. Other types of beef that can be used are tenderloin (fillet mignon), porterhouse, or even chuck steak. If you decide to use chuck steak, marinating for a longer time with citrus ingredients will be necessary to tenderise the meat.
Tools: You can opt not to use any oil to spray the air fryer alternatively you could use parchment paper made especially for air fryers.
Serving Suggestions:
- Leafy greens and cherry tomato salads with a drizzle of balsamic vinegar and olive oil are quick and easy sides.
- Any type of cooked rice will add some carbs to the meal with convenience.
- Potato salads gives the meal a tangy taste.
- Roasted butternut squash/pumpkin or air fried garlic butternut squash/pumpkin.
- Stir fried brussels sprouts with garlic and oyster sauce or air fried garlic brussels sprouts.
- Italian and Mediterranean pasta salads compliments’ the kebabs perfectly.
- Simple grilled flatbread and tzatziki sauce are great to make the meal lighter.
Air Fried Beef Kebabs

- Air Fryer
- Skewers (wooden or metal)
- Tongs
- 2 x large mixing bowls
Ingredients
- 400 grams Beef Sirloin
- 3 cloves Garlic
- 3 Button Mushrooms
- 1 Zucchini
Meat Marinade
- 5 tablespoons Soy sauce
- 1 tablespoons Dried Basil
- 1 tablespoons Garlic salt
Vegetable Marinade
- 1 tablespoons Dried Basil
- 1 tablespoons Garlic salt
Instructions
- Cut the beef sirloin into 1-inch (2.54centimeters) chunks.
- Combine the beef sirloin chunks with the meat marinade ingredients.
- Let the beef sirloin marinade for at least 45 minutes. For best flavours leave the beef sirloin in the marinade over night.
- Cut the mushroom and zucchini in thick slices 0.4-inch (1 centimeter).
- Cut the garlic cloves into thin slices.
- Marinade the mushroom and zucchini with the vegetable marinade ingredients for 45 minutes.
- Soak skewers in water for at least 10 minutes.
- Once the meat and vegetables are done marinating, start putting the ingredients through the skewers. I usually start with the vegetables first, then the sliced garlic, and then the meat. This is pattern is repeated until the skewer is full. If you want the ingredients to be grilled in between, leave a small gap between the ingredients.
- Pre-heat the air fryer with a temperature of 180 degrees Celsius (356 degrees Fahrenheit) for 2 minutes.
- Spray some oil in the Air Fryer basket. Alternatively, you can use Air fryer parchment paper.
- Pull the air fryer basket out after the pre-heating is completed. Make sure to use tongs, as the air fryer basket is hot after the pre-heating, and place the kebabs in a single layer in the air fryer basket.
- Set the air fryer at 180 degrees Celsius (356 degrees Fahrenheit) for 10 minutes. Then place the basket back into the air fryer for grilling.
- When the timer has reached 5 minutes pull the air fryer basket out and turn the kebabs around. Note: if your air fryer comes with a rack, you can place the kebabs on the rack and then it does not need to be turned. The circulated air will crisp the other side as well as it will be elevated.
- Place the kebabs back into the air fryer for the remaining 5 minutes at 180 degrees Celsius (356 degrees Fahrenheit).
- Pull out the air fryer basket when the air fryer has finished grilling.
- Take the kebabs out with tongs and serve with your favourite sides (look at serving suggestions above for some ideas).
