Air fried chilli lamb fillet to perfection

Grilling lamb fillet is a convenient meal to make that is simple and every bite is full of juicy flavours that goes well with just about anything!

The main thing to get right is the temperature and time as it can be easily overdone or underdone. Another complexity is that everyone has different preferences when it comes to cooked meat so using the right appliance for you would make a big difference.

I find grilling lamb fillet in the oven a little tricky as I could rarely get the temperature and time correct. So, I often did not get the result that I wanted.

The air fryer on the other hand, is a lot easier for me to get the right settings so that it comes out crispy on the outside and tender on the inside every time.

Things to note:

Air Fryer: There are various types of air fryers so it is noteworthy to check what type of shape and size your air fryer is. This is because smaller air fryers may require the fillet to me cut in half as it may be too long.

There are also multifunctional air fryers that can cook a lot more meat in one go. Some of them will have more than one rack and some even has a rotisserie function. If you have an air fryer with rotisserie function, you can try this recipe using the rotisserie function.

Texture preferences: I prefer my lamb sirloin to be medium to well done so if you prefer it on the rare side, you can decrease the time. There may be some experimenting at first because temperature settings of every air fryer may vary.

Enhancing Flavours: Marinating the lamb fillet for longer would let the flavours settle in better and it can tenderise the meat further.

Mix it up with the flavours: If chilli flavours do not take to your fancy, you can replace it with basil, oregano, or rosemary which also brings out the aromas of the lamb. In addition, adding a little bit of lemon juice will add a zesty taste and helps to make the meat tender as well.

Serving size: The portion size for the recipe is 300 grams which is a good serving size for 2 adults.

Tools: You can opt not to use any oil to spray the air fryer alternatively you could use parchment paper made especially for air fryers.

Equipment

  • Air Fryer
  • Tongs
  • Large mixing bowl

Ingredients

  • 300 grams Lamb Sirloin Fillet

Meat marinade

  • 5 tablespoons Soy sauce
  • 4 tablespoons Oyster sauce
  • 2 cloves Garlic diced
  • 1 tablespoon Chilli sauce

Glazing mixture

  • 2 tablespoon Honey
  • 2 tablespoon Water

Instructions

  • Combine lamb sirloin fillet and ingredients for the meat marinade in a large mixing bowl. Rub the sauce and garlic into the lamb.
  • Let the lamb marinade in the sauces and herbs for at least 1 hour. For best flavours leave the the lamb in the marinade over night.
  • Pre-heat the air fryer with a temperature of 180 degrees Celsius (356 degrees Fahrenheit) for 2 minutes.
  • Spray some oil in the Air Fryer basket. Alternatively, you can use Air Fryer parchment paper.
  • Pull the air fryer basket out after the pre-heating is completed. Make sure to use tongs, as the air fryer basket is hot after the pre-heating, and place the lamb fillet in the middle of the air fryer basket. Drizzle some of the remaining marinade over the lamb fillet so that it just covers the surface. Ensure that the lamb fillet is not drenched in sauce because the sauce can burn in the air fryer.
  • Set the air fryer at 180 degrees Celsius (356 degrees Fahrenheit) for 10 minutes. Then place the basket back into the air fryer for cooking.
  • In the meantime, in a small bowl mix the honey with the water.
  • When the timer has reached 10 minutes pull the air fryer basket out and coat the lamb fillet with honey water.
  • Place the lamb back into the air fryer and set the temperature at 180 degrees Celsius (356 degrees Fahrenheit) for 5 minutes.
  • Pull out the air fryer basket when the air fryer has finished cooking and let it rest for 3 minutes.
  • Take the lamb out with tongs and slice in 1 centimeter slices and serve with your favourite salads or vegetables. Refer to serving suggestions above for ideas.
